Since it's been cold, my body has been wanting warm foods, so one of my favorites that I've been eating NON-STOP is black bean spaghetti and raw alfredo sauce. I can't even begin to explain to you exactly how much I love the sauce! I use it for everything! The black bean spaghetti is so yummy and such a great source of protein! My kids actually tried it and liked it but aren't willing to eat it so much because of the spaghetti being black! Crazy! Anyhoo, I totally suggest trying it!!!!
Another way to start a day would be hot water, lemon juice, cayenne pepper, and little pure maple syrup! It will kickstart your metabolism and make you all warm inside!

Something to Ponder...
So, today my horoscope said to "Cook a meal, walk the dog, do whatever relaxes you most today. Frayed nerves lead to out-of-the blue tears". I don't put alot of stock into horoscopes. I really just read them for fun but this SHOULD have applied to me today but with a snow storm coming through, washing tons of wet clothes, and trying to entertain the kiddos, it was DEFINITELY NOT relaxing! Sooooo, I worked on some new peices for my jewelry. Pottery peices, actually. I'm going to get them up and running this week!! I'm excited and scared but it's time. I've been putting it off WAY too long so stay tuned!!!

A New Year and New blessings...
As usual, I didn't stay up till midnight lastnight but Oh well, right? I mean, if I had, my body would've hated me in the morning! I have so many resolutions for 2011! First thing is first, get back on my strict vegan diet! I slipped during the holidays and have been paying for it! A new year means new starts, goodbyes, lettting go, and opening new doors. ALL of this applies to me! I'm so blessed and I feel that this year will be great!
Now, on to sharing some of my week. I was able to visit with one of my best friends for a day. It seemed to go by so fast. I love spending time with this person b/c I can just be myself and I don't feel that I have to be doing something all the time that we hang out. We can just "be". Soooooo, my lovely, sweet daughter took a pic of us knitting. PSA: Knitting is NOT just for the old! LOLOLOL!!!! Anyway, I'm blessed to have her as a friend!

We left there to spend time with my cousins: Melissa and Lacey. Melissa can always make me laugh, no matter what, so it was it's always wonderful to see her! She's a good soul and I KNOW that she's special just to put up with my crazy clan!

The almost tween years...
My daughter will be eleven in Feburary. We have been going through some changes lately, meaning, SHE has been going through some changes. This makes me sad. Sometimes even mad. Sometimes irritated. Sometimes, I have to laugh. I refuse to believe that I ever acted the way she does.
So, I captured her day yesterday.
Ah yes. The all, endearing attitude. I had to laugh about this.
This is probably her favorite place since the girl has been eating us out of house and home. The craziness of hormones have started. God help us!!!

Early Christmas Morning
4:00 AM Christmas morning. This is the time I hear little voices in my half awake ear, while they were nudging me. "Let's go see what Santa brought". ARE YOU KIDDING ME????? WHY do they insist on getting up so early? We head downstairs (thank the lord that I had the coffee ready). Let me just say that by 11:30 am, it felt like it was bedtime.
Yes, my little one wanted an mp3 player and he loves the Jonas Brothers, so he couldn't have been happier.
Caleb got his tablet that he wanted. Now, if we can just get flash on it:(

A Busy December
Is it over yet? December? Christmas?? Nope, one more week and then we'll be into 2011! Can you believe it? I'm definitely ready to get back on a schedule. During Christmas break, the kids have WAY too much time on their hands, which in turn, drives me absolutely nuts. On top of that, I made a total mistake: ate ham on Christmas day. I haven't really been eating anything much other than vegan/vegetarian for the past few months so my body let me know that it wasn't happy. So, back to the diet. For lunch, I made a yummy Vegan Oatmeal Cookie that I got from http://ohsheglows.com/. It's big and very good, especially topped with Almond Butter:)

The bustle of Christmas
I woke up this morning in a panic. Realizing that my youngest boy turns 5 tomorrow and the preprations for his bday party this weekend AND finishing up Christmas shopping...WHEN WILL I HAVE TIME??? It's always last minute. Every year, it's last minute. However, this year I'm focusing on the real reason for Christmas. Not the gifts (they will get a couple) but I want my kids to celebrate Christ's birth, not celebrate how many gifts they get. During the holidays, I think that we get too busy baking, shopping, and decorating that we don't have time to breathe. I love all this stuff, don't get me wrong, but I need to just slow down. Another great idea, most of the gifts this year are going to be homemade (the best kind). I already foresee a WONDERFUL Christmas!!!! I'm so blessed!
